New Winners for the Rotation

I'm on a new recipe kick lately. I'm tired of the recipes I make all the time, so I consulted Pinterest and came up with a few new winners for the rotation.

I made this on a Sunday night when I wasn't particularly feeling like cooking. It was very easy to make and everyone loved it! I only used 1/2 cup mayo (maybe not even that much, since some people in this house don't like mayo) and it worked perfectly. I used my method of covering the whole dish with parchment paper (tucking in sides) and cooked for the recommended 45 minutes and the chicken came out tender and juicy. I served with some leftover angel hair pasta noodles and this dish was definitely a winner!

I made a few tweaks to this recipe. I did not use the can of Rotel because my kids probably wouldn't touch it if they saw green peppers in there. I used a dash of red pepper flakes instead. I also didn't have heavy cream on hand, so I substituted half the amount called for with low-fat cream cheese. Finally, I didn't put the Monterrey Jack cheese in at all and I didn't bake it. My kids are not fans of melted cheese, and I didn't think the recipe needed it anyway. We all ate this up and it was definitely another winner!

I may be late to this game, but this was the easiest recipe and I like the bars better than chocolate chip cookies. And I can think of many ways to change up this recipe and make lots of fun desserts! They were gone very fast. Not gonna say how fast.
